I tow a 2003 SeaRay 185 with my Ranger and it looks a lot like your boat.
Mine is a 2000 Sea Ray 185. I love it's size as it's our first boat and we've only had it for 2 seasons. Learning how to launch, menuever, and recover the boat has been fun and I think the size is just right for us. Until we get out on a busy lake, that is. The last time we were out, I hit the wake of a 36' Sea Ray and it popped a cup holder out of the bow and tossed it overboard. Boooooooo! LOL

Here is my 2003. The Ranger tows it very well but I do get a rise in the oil level when on a long haul. It is only when towing that the oil level rises.

Nice! I love the lines of a Sea Ray!
Right now I'm not having to tow mine very far. We have a cabin in a marina on the local lake that we launch from, but we store it 3/4 of a mile away at a dry storage yard on the same road because it's 3/4 of the price cheaper!

Camping season is done at the Jersey shore. Towed our new to us 29 ft 7500 lbs loaded camper back the 110 miles back to PA. The truck does fine until I get up to 65 and everyone else races by at 80mph. I feel a big difference in the wind from driving 60mph vs 65 mph. I actually am happier at 50mph because of gas. At the higher speed I only get 11.5 mpg. At 50 it is 14 mpg which to me seems a big difference in mileage for this biggish trailer. Low speed high drag...

We opted for a NuCamp Tab 400 Boondock. We bought the camper before the truck.

wow, so you are towing at the full max weight allowed at 7500 lbs? I guess that is water tanks full, and loaded with all the food and camping gear, yes?

How did it handle from side to side winds? I guess weight has a lot to do with acceleration, but more importantly, braking. Which brake controller did you select?

We are looking to buy a camping trailer likes yours and I'm trying to figure out the max weight. I have heard that you should only tow 80% of the advertised capability, so if they say our trucks can pull 7500 lbs, then the safe limit is around 6000. Hum..then I see you have done it with no issues...

The 5g Ranger has a safe tow limit of 7500lbs, when properly equipped, bottom line. Meaning a brake controller (and trailer brakes), weight distributing hitch, sway bars, and a competent and skilled driver in control. If any of those are not met then the limit should probably be reduced. But in the end, the truck can safely tow 7500lbs, there is no reduction factor needed. Some people say you shouldn't tow more than 3000lbs with this truck, and maybe those people shouldn't if they feel that way, but that has nothing to do with the capability of the truck.
