That was probably overlooked, which should have been one of the first things to check - especially since the cap is plastic now. It might be worth just replacing the cap, not that I like throwing money at potential problems!Did they pressure test the Cap?

This!!! Many, many, 3.2 diesels have suffered premature deaths over here due to the crappy EGR cooler splitting a seam and dumping the coolant into the engine. It generally starts slowly if you top it up and it goes down again, definitely get this checked. If it lets go, and you're lucky, just a cracked or warped head, if you're unlucky, a holed piston and a cracked block. By the time the computer registers an overheat, the damage has already happened. This tends to happen around 100,000 Km or say about 60,000 miles.if it continues to lose coolant - keep in mind that Ford's revolutionary EGR system for the ages featuring an EGR cooler has been know to leak and if not caught can do some major harm to your engine.
