When I was a kid, I worked at McDonald’s, we used to get Idaho potatoes by the sack approximately 100 pounds, then we put them in a barrel that spun around and took the skin off the potatoes, not completely, we then took them to the potato cutter and cut them into 6” pieces and put them in a stainless steel sink with cold water and soaked them. Drained the water And soaked them until the water ran clear. Then we put them into a basket in oil and blanched them at 120° for 20 minutes. Then put the baskets in a rack and let them drain.. when an order was ready we put them in 350° oil until the fries were done. Then served.. hamburgers were put on a flat griddle with chopped onions underneath cooked with a toasted bun that was also toasted on the griddle. The fish sandwich was dropped in the fryer and put on a toasted bun with a slice of American cheese and back then it was the best fish sandwich I ever had and the burgers got a small quirt of ketchup and mustard with a pickle on top also a burger to die for. You could get the fries and a Coke for $.15 that’s back when they really had quality. I really miss that. The fries had a little bit of skin on them, which gave them a unique taste. I wish they had that now and that’s the story and I’m sticking to it.8I never thought of that you are probably right.
