Saw some salmon fillets that looked good so I decided to get out the Cameron’s Stove Top Smoker using Alder chips. I use to use the smoker all the time, but haven’t used it in a few years. Love this thing.

Crockpot full of cranberry beans. Added a smoked turkey leg and andouille sausage and it was awesome over rice with a buttermilk cornbread muffin!

I roasted chicken thighs (skin and bone-in) in a cast iron skillet with sweet potatoes and onions. Now, I’m wishing I had some stuffing and cranberry sauce.
We always have a couple bags of cranberries in the freezer. My wife stocks up the day after Thanksgiving when the price drops 75%. I got some skin down and this was the biggest meal I have enjoyed since last September when I started having stomach and digestive problems along with fainting like one of those goats. Only good thing is I have lost 35 pounds. I really did enjoy this.

Late corned beef and cabbage. The corned beef go on sale the day after St Patrick's day so time to take advantage of cheap meat 🤫. Just have to add the mustard and horseradish 😋. Tastes even better at half price.

The biggest baked potatoes I have ever cooked. 10 pound bag from Costco only had 8 potatoes in it 😲. Did some chicken for my wife also.

Ed I have mine soaking in Coke overnight and will smoke this 7 lbs rack of ribs tomorrow, Memorial Day. I've been waiting for them to go on sale and It'll be the first rack I've done since getting the smoker. I need to head back to Fry's on Tuesday and get 2 more because they're buy 1 get on free. I got two - 7 lb racks for $20.80.

We only do the baby back ribs now. They are easier on our old stomachs. Costco sells 3 packs that are already peeled at decent prices. Have always smoked them in the Weber kettle (using crabapple chunks ) in the past but yesterday it was rainy, cold, and very windy so I tried the new Genesis indirect and added a light coat of Sweet Baby Rays for flavor at the end. They were pretty good in the end.

I think I might try the baby back ons next. While these were good there's always a lot of fat on the racks but the flavor was perfect. I soaked them in Coke for 12 hours then used a honey pork rub that had just a little kick to it. After 3 hours (180*) I took them off and added pats of butter and brown sugar then back on for about another 90 minutes at 225*. Then smothered them with Sweet Baby Rays Hickory & Brown Sugar sauce which was a perfect blend of sweet and spicy.

Had some lobster tails for a small appetizer. I made the first 2 so Annie could try them as she's never had lobster. She liked them so I then added the last 2 while dinner finished up on the smoker.
