It seems odd to me that the cloth driver's seat of my XLT only has one map pocket. Not a huge deal, but weird they choose not to have one on both sides.

Probably because the driver can reach the rear of the passenger side pocket for a map or whatever but not the driver's side.
Though, maybe for cost savings.

I wasn't thinking necessarily maps although I do keep one in mine, more for the kids to stash their junk.

My wife use to call it the spatula holder. Fastest draw from the seat back for unruly kids.

I call it my gun pocket. I keep a G27 in a IWB hard shell holster in it (clip the holster onto the pocket like one would do with your belt). Then a molle panel is over the back of the seat. I can reach over, under the molle panel and access it. Between that and 5% tint keeps things hidden that need to be hidden.

Kind of an old picture but you get the idea.
