We have a reversible cast iron grill/griddle insert on our new gas stove but I haven't tried it yet. Annie uses it every day to heat up her tortillas on the smooth side and there's a grill side where you can sear and grill on.

The range has all sorts of settings.... air fry, air roast, air bake, grill mode, & slow cook. I guess you can use the griddle inside the oven on grill mode and it's "supposed" to be like cooking out on the grill. Yeah I wouldn't want to clean the mess after using it on the stove top either. lolNice new range! The reversible griddle I have is very similar.
I finally started using the flat griddle section of my range. So far, mostly for breakfast and some grilled cheese sandwiches at lunchtime. I can’t bring myself to use it to pan sear a steak or anything that would splatter. It has a stainless steel backsplash and it’s tough enough to keep clean as it is.
Speaking of backsplashes, when does yours get installed? Did you pick a tile yet? You could keep the current design and just mud over it whenever it gets splatters.
