So, will the tranny eventually update the tables based on new circumstances, or will it just sit in a corner, rocking back and forth and drooling on itself until the tables get cleared? I would hope it will update the tables. If not that doesn't make a lot of sense to me.
I would think the cells in the table would keep their orginal values unless overwritten by the new values. so it would just revert to its default programming in that situation. This would explain some of the wonky complaints. These are just my mind wandering thoughts on the subject not any real knowledge. Probably not close to how it really works.

Your theory makes perfect sense to me and is kind of what I was thinking as well. I partially based it on learning about how my Holley Sniper EFI "learns" - it is almost exactly like what you describe. There is a base table that over time, as you hit the various cells in the table, will update based on current conditions. You can turn learning off, but even if you keep it on, it will do less and less changes over time.

if i was shooting a video as a "subject matter expert" (self appointed?) and just blabbering away, and had some idea what i was talking about and making stuff up as i went along as well, i would expect others to question my comments. And thats fair.
I'm sure the guy knows alot. probably has access to a lot of info none of us ever will. its his delivery that makes me question the truth. I've seen many of his other videos, and i see the trend.
He needs a Rockwell lab coat. This video may provide the depth and credibility you crave.

So right after he talks about the transmission needing to learn the driver and the driver's driving style, he says that the way to teach it (starting ~3:15) is to clear the tables, then go out and drive nice and easy, keeping under 2000 rpm while it learns all that stuff it needs to learn.

Let's put it another way: it needs to learn your driving style and the best way for it to do that is for you to drive completely different than your driving style during the learning period. This is the sort of logic that's hard for me to take seriously.

Adaptive Learning Drive Cycle
Activation
NOTE: Perform the adaptive learning drive cycle on a level road surface.
1. Record then clear the DTCs (Diagnostic Trouble Codes).
2. Drive the vehicle until the engine and transmission reach normal operating temperature.
3. Accelerate from a stop with light throttle (15%) ensuring that upshifts 1st through 8th occur at engine
speeds between 1300-1600 rpm.
4. Continue to accelerate (may apply slightly more throttle after 7-8 upshift at 32-38 mph (51-61 km/h)
until you achieve 55 mph (88 km/h) and the 8-9 and 9-10 shifts complete.
5. Brake very gently to a complete stop and hold foot on brake for five (5) seconds.
6. Shift the transmission to Neutral. Wait 1 second.
7. Shift the transmission to Reverse. Wait 2 seconds.
8. Shift the transmission to Neutral. Wait 1 second.
9. Shift the transmission to Drive. Wait 2 seconds.
10. Repeat Steps 3 through 9 six additional times.

And that is the conundrum that mechanics even dealer mechanics have trying to fix vehicles. Corporate doesnt want to give away all of their secret inventions. So, much of the facts that you read on the internet is guess work. I doubt if any engineer is aware of how all of the trans parts work.

Sometimes those secret inventions don't work. Ford tried to replicate VW/Audi's success of the DSG dual-clutch automatic with their PowerShift transmission.
