Scorpion Tacos ..see other post ..

Being single, making casseroles, roasts, and other large baked dishes make waaaay too much for just 1 person and some things don't freeze well. I remember as a very young child, my mom made a casserole with baked beans, diced potatoes, and ground beef. I didn't know the name of it until 5-6 years ago....Hobo Stew.

Instead of making a full casserole, I use about 6-7 oz's of browned ground beef, a single serving size can of Bush's baked beans, and a single serve size mashed potatoes. Heat it all up, and mix it all in a bowl and top it with ketchup with a few biscuits on the side. Sounds ok, doesn't look pretty, but tastes great.

We eat a lot of chicken so tonight I made some chicken dumplings, it's so easy and they taste great. Just take Crescent rolls and add chicken and some cheese, wrap and bake for 15 minutes and pour some cream of chicken soup over them.

lol nope that's mine along with a salad. She actually doesn't care for it so I get a couple meals out of it. We rarely eat the same meals because she likes tons of different spices and stuff added to hers.

Probably can't locally obtain the spices she likes best, because...Arkansas.

Makes a good case for leaving town, I'd say, along with the constant banjo noise from down the street mixed with the tornado warning sirens.

But that's just me. I live on the face of the sun so what do I know?

I don't like the hard tacos, like on the picture, but those soft enchiladas with cheese topping are great.

There is one, I'd say Mexican but really can't tell which mid-/south-american country, place where they serve pretty good ones. The place looks like a disaster, most likely on purpose, but the food is great. And come to think, there's really not much meat in the stuff, mostly just veggies like lettuce, cabbage, peppers and carrots in the enchiladas.. but the taste is like.. good.

Hmm.. Maybe it's time to take a trip to there over the weekend.
