We do something similar but with a fall flavor. We throw in our home made kraut, apple cider, chopped apples, sliced sweet onions, and beef stock. Good either in the crokpot if you have time, or 1/2 hour in the instapot. Pork is our favorite meat.

Sounds really good Ed. I have an Instant pot but haven't tried cooking a pork loin in in yet. I was using it for the carrots and slow cooked the pork loin (4 lbs) for 4 hours which was perfect. We both cut down on red meat several years ago and both love pork too.

Every now and then the wifee gets on a health-kick................salads for supper........I'm good with that......alot of croutons, bacon bits, Dorothy Lynch dressing, more bacon bits and a package of ritz crackers. Nothin' 'healthy' bout my salads! LOL

We buy a lot of the pork tenderloins at Costco. They melt in your mouth if not overcooked. Really nice when marinated with a soy based marinate.
The loins we usually grind half of what we buy and make a 50% pork / 50% beef meatloaf mix that has a great flavor. Not much red meat in our diet anymore either.

It’s a bit too cold to grill outside but a good cast iron grill pan is the next best thing. A big fat glass of Cabernet Merlot helped round out this tasty treat.

Berry - best Bar B Q . small family owned place a couple towns over from me. Best sauce and barbq I have ever had. The RIBS are perfect every time. Id post a picture but it is too late. all that is left is acid reflux and fat belly.
