We do it every year and enjoy it more then the Thanksgiving bird. Dark meat goes in the soup made with the carcass and drumsticks soo your out of luck.

We did stuffed Peperone Di Cuneo peppers from last years garden. Best thick wall small sweet stuffing peppers ever. Our canned tomato puree gives them the taste of summer.

We just throw them in the freezer. Pre freeze and then vacuum pack. They stay good for up to a year.

The taste of summer is NOT an adequate description of those peppers. The stuffing looks good though.
