Is there any way to set the rear camera on a 2020 range to be on all the time for a short trip?

You can set a "delay" in either the settings or ForScan. Can't recall which. This can leave the camera up for a bit after you shift from R to D. But only for a VERY short drive, like maybe half a block

The “delay” - activated in settings, is actually speed based , not time. I believe it leaves the camera on up to 10 or 15 MPH. So, yes you can leave your camera on for a short drive, as long as you aren’t planning on getting there quickly.

Retired, work is a four letter word.
On other systems I have had there was a 'reverse sensor wire' that you could feed 12v to via a dash switch to turn on the backup camera. In fact my RV's Jensen system is hooked up that way as I like to keep an eye on my Ranger when towing it. I am not sure if that wire is accessible on the Rangers infotainment system.

Seems like mine cuts out at 6 MPH, although it's kind of hard to look where you're going, watch the speedometer, and keep an eye on the camera. I can only do one thing at a time and that's questionable! =D

Plus I have the dinky 101A display so that could even be different I suppose.
