That little bow and putting the palms of the hands together is called wai pronounced "way"
it is used when greeting, thanking. They are very polite and do it all the time it seems.
When I was working selling sugar machinery I travelled there several times it was a good market. Always enjoyable, and I never once was "surprised" Those places are usually confined to certain areas and streets, at least back in the 80s and 90s when I was there.
