Twice I've asked my Ford Dealer how much it would take to update my computer to recognize larger tires and re-calibrate the speedo and MPG calculations. They aren't sure but it will cost at least $280 and maybe more. Might take a full day in the shop. Da hell?

How is it that they "can't be sure?"
How can this task take a full day in the shop?
How is this not some easy plug and play option?

Honestly, I'm sorta surprised it isn't in the Driver Settings Menus in the Gauge Cluster.

So is Ford trying to give me the old stroke and bore on this or what?

Hmmm... Might have to look into that.
Or see of anyone in the N.Phoenix area wants to earn a bottle of whiskey / tequila.

Which dealer do you work with?

Dang.
That's where I go, and was going to recommend them to you.
Just last weekend was there and asked my service advisor Justin Reed nearly the same exact question, as when my tires need replacing I want to go one size bigger. Justin said sure, there's no problem with recalibration and to just let him know when I was ready and he would get it done for me. But I didn't question him on time or price to do it, as I've got probably the rest of the year before stock tires need replacement.
If Justin isn't the guy you talked to, maybe call him directly and see if you can't get a more intelligent answer?
Just a thought..

That's kinda the reaction I got. Service Advisors all said SURE! Then they came back with the real answer of "we aren't really sure - it depends..."

And if you look at the number of lifted crazy ballz trucks on their lot, I have to assume this is something they have done before. I can't be the first guy in AZ to ask for this.

If you a little bit firm with Windows-OS and want to spend 20$ for a OBD dongle, you can do it with Forscan by yourself and some more gimmicks

So if FDRS has the tool to do so all I would charge is 1 hour of labor. Depending on the labor rate would tell you how much. If you are comfortable using ForScan then I say use it as that will work and is inexpensive.

It would seem to me that Ford corporate, and dealers, don’t consider it their responsibility to make adjustments to the truck in order to accommodate aftermarket, or different sized, items users install. That’s up to the user and foreskin is your friend.

I use a Hypertech Speedometer Programmer (used of off eBay for $100) on my '19 with 285/75R16's. Pretty easy to use and reverts back to stock quickly, if needed. Would use ForScan as stated above but my laptop is an Apple (not supported). This was the most cost effective route in my scenario.
