Yum! It looks like Prosciutto. ?

Yup. The low temps keeps the body good and it gives nice dry aging (main part of prosciutto) to it. Week of two and it's ready for use. If the temps go really down (spring) you can get excellent frost dried aged meat with sun & below freezing temps.
