Welcome back Tracy! I too was gone finishing my degree requirements. Yes posters are right, you bring a calmness to the posts. Wanna cuss at these grumpy old farts, but I ‘try’ not to cuss in front of women, children and anyone affiliated with academia. You are missed.
P.S. My wife went Vegan (but doesn’t vote that way! ?) to lower her lipids. And bc she is the cook, I am Vegan by proxy. I wanted her to go statin but she lowered her Total by 73 points in first 90 days. She is at 191 now three years into it. Still high but as a Personal Trainer, her other factors (height, weight, BMI, waist) are awesome. Plus we eat REALLY good. Better when she adds Turkey or chicken to my plate! ?

Yes, I was pleasantly surprised about my cholesterol, and it really wasn’t hard for me to do without pork or beef. Not gonna lie-I’m about ready for a steak!
Sounds like your wife is a very determined woman. Good for her! Great accomplishment!
