My '21 Lariat is on 18 " wheels. If I change to 16 " wheels in order to lower the truck would this cause speedometer error ?

You can get 16 inch wheels with low profile tires and it will lower the truck. Anytime you change the tire diameter size you will need to recalibrate the speedo.

There are ways to lower your suspension. Freak Rides has a kit. And Belltech is rumored to have one out this summer.

This is a helpful site- if you put in your current tire size and what you're going to, look at the bottom and you'll see a chart for speedometer error.
