I enjoy smoking meats in my Grilla pellet smoker and just picked up some pork belly. I have nothing but time due to the quarantine lockdown, so I plan on using it more often. I picked up some pork belly and wondered if any of you fine gentleman have tried it in a smoker. Here’s some pork spare ribs from last week, delish!

Have smoked pork belly.After the curing is done, rinsed and dried it then smoked with hickory till temp was 155f. Wonderful bacon

Pork Belly Burnt Ends
cube it into 1.5 in size and cover with rub

smoke for 2.5 hrs at 275 f
put in pan with brown sugar and butter, covered, back on the smoker for 1.5 hrs
transfer to second pan . put bbq glaze on and put back in smoker uncovered to set the glaze

I've not done pork belly but have done most everything else. The newest one is smoked reverse seared steak. We smoke it @ 225 for 35-45 minutes, depending on the thickness until it reaches 120 (rare). We then take them off and raise the temp to 400 and sear them for 1 1/2 minutes a side. They end up at a perfect medium rare and are truly amazing.

If we weren't supposed to eat animals they wouldn't be made out of meat.

Side Note: Clever, short (1 page) SciFi story - "They're Made Out Of Meat!"

I agree that you need a smoker. Here's a picture of Chile Verde marinated then smoked Tri-Tip that we just devoured for dinner. So Damn good!

Looking good! I have never been a huge turkey fan, but a few years back I started smoking them for Turkey-Day and have been hooked ever since.

Did you brine it prior to smoking by any chance?

No, I haven’t tried brining yet, but the last turkey I smoked turned out great without brining, so I did it the same way again. I may try brining next time. :)

I have a 20 year old smoker. Side box charcoal setup. I’ve done Turkeys that took almost 2 days to slow cook. It was 28 lbs. My alltime fav was the rib eye roast for Christmas one year. It was around 20F outside but I was determined. Best dinner ever. Most of the sides got cooked in there too. But, a quick cook of a few racks of ribs well rubbed and slow cooked till it falls off the bone is callin my name right now! ?
