Which one did you go with? It looks like there are a few options
I went with this BDX tuner with 87 daily/tow, 91 daily tow, and 91 performance tunes.

I also got the 6yr/100000 warranty.

Which model do you have for the Mishimoto intercooler? Do you know if it is any better than Roush products?
I far as I know, there is only one model of Moshimoto intercooler for the 2.3 ecoboost Ranger. I chose that one because of the favorable reviews of the intercooler piping kit over the competitors. The whole kit preordered saved me some money.

another note is Fuel, like some people have stated already.

You should absolutely be running 91-94 octane fuel even WITHOUT the tune. Forced induced engines THRIVE on high octane fuel. Turbo's generate heat, and that contributes to pre-ignition and retarding of timing. Higher octane fuel helps with pre-det and knock. Do your engine a favour and feed it the good stuff!

Between those two, since I tow in Vegas where temps are +100F often, I was leaning towards the Ford one to cover my bases. The thing is I want to be able to monitor engine/water temp, trans temp and load. I could think of other useful values but do either of these allow that?

Does the handheld unit NEED to be plugged in after flashing at all on either of those two? Worst case I can just use my Scan Gauge ii for the temps like I currently do.

FPP programmer lets you input the revolutions per mile that corresponds with your tire’s size, regardless of your tire’s size.
Thought I saw it said up to 265/65 or something to that effect

I don’t think that is in reference to the capability, but refers to having a manufacturer warranty with the tune. In other words, there are other FPP products sold that specify the use of tires up to 265/70R17 so the published features don’t include larger tire sizes.
