Bad Service - what would you do?

Ask for a call/meeting with the service manager. Tell him you wanna give the dealership a good review when Ford sends it out, so you wanna give them a chance to fix it.

Oil change techs handle the light work like your oil change. An actual certified mechanic would most likely be assigned the job of fixing your bolt hole.

Good luck with whatever you try.
I got lazy and had a dealership do a tranny fluid change. Since I have
Shrockwork skid plates, I removed them so they wouldn't have any reason to complain.
Picked the truck up near the end of their service hours, drove 40 minutes home and got out of the truck to smell quite the stench of burning tranny fluid.
They must have gotten at least half as much fluid back in the tranny as they splashed all over the under carriage and exhaust as the tranny still works.
Phone calls went unanswered, not even voicemail. Their website had email link to send any problems. Never heard back. A couple days later I get the official ford email asking how my service was so I responded to their survey with the situation. A few days later, the official ford site emails me again, this time asking if the dealership has contacted me. I respond that they haven't.
I did get an email from the dealership letting me know about upcoming service and tire deals and letting me know how easy it is to schedule on line.

Hi All - So went to get 2nd oil change today at approx 2 years ownership and 12K miles. Got home to check underneath for oil to clean so it didn't drip on driveway etc. Anyways they stripped one of the skid plate bolt holes in the frame and just left the bolt and washer hanging 1 inch off tight and crooked and said nothing. Everything else appears OK. 99% sure it was them not the first oil change a year ago. Don't really want to bring it back to either dealers (why bring it to a dealer if they cross thread anyways?). Only had 2 oil changes so far at 2 different dealers. What would you do next here?

I'd report it to the service manager and see what the reaction is, but do it myself going forward
