Since multiple buttons can trigger the Climate Control back on, possibly note which ones are lit up when it does it again - possible isolation of which switch is actually picking up its being pressed.
Before turning it off, get it down to bare minimum lights lit, so AC, Auto etc selected off.
When is does it again - note which buttons are lit up.
I cannot find anything where the system is able to trigger on by itself when its selected off, so depending on humidity level would be the only factor and I do see anything where it documents it can come on (automatically) in an attempt to dehumidify the cab - (If its off)
