Just my casual non-expert opinion, bison don't "gang up" on a threat, or protecting their harem. My wife and I have gone to Custer State Park in SD for over 40 years where they have a herd of around 1400 to watch,
The males will spar with each other for mates or to protect their harems.
I think the original video was probably of the two bison sparing, and the truck was edited in.
This is more like it, although they will be aggressive if you appear to threaten their harem, especially females with calves.
