Not long after I purchased my 2019 Ranger I installed Bilstein 5100 shocks to help with the Ranger wallow as I call it. It's made a world of difference but I've noticed or mostly my wife has noticed going over dips and bumps the truck definitely has a bit of a bounce in the rear. I don't really notice but if anyone is in the back seat it's noticeable. Question will a leveling kit or leaf spring kit help with this or should I throw a couple hundred pounds in the back

A leveling kit won't make any difference. Bilsteins are stiffer than stock, hence the bounce.
Put two or three sandbags in the back. I do just for the winter and built a box out of 2x4's and plywood to hold them in place and so I can set things on it.

I have the FP Fox Leveling Kit with LT tires at 37 PSI. It can be a bit jarring on harsh bumps, seams, potholes, etc. A few hundred pounds in the back settles the ride nicely. Even 200 pounds makes a difference.

Nope. Same height as stock. You actually drop the overload spring and lower the back a half inch with those springs. And the ride is way better.

Depends on your budget. I can attest that the ride got WAY better in the back when I went to ICON leaf springs with the FP Fox 2.0. Later on I ended up swapping to all ICON with about 70k miles on the Fox that had started to get bouncy. The stock progressive mono leaf is a neat design but it’s all about economy and not ride quality.

Will it raise the height of the rear end? Don"t know if that's what I want

The bounce in the rear is pretty common on these trucks, even with upgraded shocks. Adding a leaf or some weight in the bed usually helps more than just a leveling kit.
