I would stick around 35 psi (37 is fine) for that size and load rating. If the ride is a bit rough, you can always drop the pressure by 1-2 psi and test again.
What size did you go with? What load rating? Pressure is a personal preference. You shouldn't go below 30, since that can cause issues with safety. 37 seems high. The proper way to find pressure is the chalk test (LINK TO METHOD).

4.88 is the only option I found. You can do 4.56 but, from what I found, you have to replace the front diff with the Dana FDU. That's a whole other can of worms.

Depends on the speed... We have 55, 65, and 75 out here. The truck cruises comfortably at 65-70. 75 is a little high and 85 is screaming. The truck will hold 85 but the RPM is high. I will get numbers for you next time I drive.
