You can buy a Bluetooth OBD2 dongle for 20 bucks and download some app like torque to read the coolant temp. On cars I've had in the past, the needle could be dead in the middle starting at 160 degrees and not move at all up to 230 degrees. On other cars, the general rule of thumb was if the needle moves at all past center, shut the car off immediately (in the case of e36 M3s).

Forget the gauge, buy a bluetooth OBD2 dongle.
As much as that may be the case in an old BMW you would be suprised how much the gauge moves on the ranger with coolant temp. I monitor it quite a bit with the Livernois My touch Calibrator and the needle moves woth temp accordingly

If that's how the ranger gauge works, fine by me. Is there a temp threshold that is considered to hot? Aside from Ford's obvious tip that it shouldn't go into the red... ?

I couldn't tell you man. Personally I dont like coolant temperature going over 220°F but that is my personal opinion.
