Yes it was Paul Hogan but the setting in the photo reminded me of Wolf Creek and another, albeit fictional Australian killer.Here I'm thinking that's Paul Hogan

He did a bit on his Australian TV show called Harry Bottler and it was a riot.
I've been looking for it for years and haven't found it yet.

Ha Harry Bottler was his take off of the real life Harry Butler, an Australian naturalist who had a TV show called "In the Wild" back in the early 1980's.

Giant Rock is the largest freestanding boulder in North America and is purported to be the largest free standing boulder in the world.

You're right, probably happened when the catapult on the mountain behind slipped prematurely, because it was supposed to fling over the match which (which struck on the rope on the way up) would light the dynamite on top of the rock, which would throw the anvil up in a perfectly calculated arc to land on the road runner beside the rock.
Something tells me these two were involved
