That sounds suspiciously like a failing DPFE sensor unit:

The transfer case fluid is NOT the same as the transmission fluid. The transmission fluid is ULV (Ultra Low viscosity) - the transfer case is LV (Low Viscosity).
Given that 215 degrees is within the range of the temp Ford wants the trans to be to check the fluid level, I don't think that should be concerning at all.
Overheating does not seem to be a big concern for these transmissions, IMO.
Small world - I don't know who owned your Ranger previously, but I bought my Ranger from Doherty Ford as well. I'm pretty sure I was one of their first 5G Rangers they got in.

I may be strange, but I have to say that the Grand Tetons are highly underappreciated. It is pretty amazing how they literally just pop right out of the relatively flat ground around them. There is LOTS to explore in that area. Not sure about off road trails, but hiking trails abound...
Very well could be similar to fuel dilution - if you do a lot of short trips where the engine doesn't get fully up to temp it might not allow the moisture to evaporate.
It is a cheap part, and once replaced is relatively easy to replace so it doesn't really concern me.
