Well you can use the ProCal4 to correct the speedometer after you install the new tires. You do not have to “tune” the vehicle to make this change.

You can plug it in and use all the gauges and diagnostics. If it's the one that was originally in your truck, you can load the tune that is in it. You should be able to revert back to stock if you don't like it.
265/70R17 will fit stock suspension with no clearance issues. LT tire is fine if you intend to go off-road, but avoid it if you value the on-road ride quality.
I don’t think the ride will feel bouncier. Upgrade the shocks, especially the rear, to improve the ride. The problem is that it is hard to find an aftermarket 16” wheel that works and fits with a larger than stock tire. There might be something and perhaps someone can recommend an aftermarket...
