That looks GOOOOOOD! I don't know if I'll have ever have the patience to do that long of a smoke. Maybe when I'm retired! Coutnry ribs came out darn good, took about 4 1/2 hours.
You can do them a little faster but I like them low and slow for the best flavor and tenderness. I also add a cup of water in the corner of the smoker which helps keep it moist. I'll start it around 10pm at 180 degrees then when the internal temp reaches 180 degrees (usually around 10 am) I'll bump the temp up to 250 and then wrap the roast in butchers paper to seal in the juices. I pull it off when the internal temps reach 200 (usually 3-4 hours) and let sit on the counter for at least 30 minutes. If you're not ready to eat it yet you can wrap a towel around it and put it in a cooler (I use the oven) for a few hours. It's so tender you can barely pick it up!

Looks like some drought relief is coming for the west with all the snow and rain coming in from the Pacific. California has been getting hit hard and the Sierra's could see up to 8' of snow and the storm is moving east so hopefully this in the Rockies should get something from this.

Crazy weather going on this winter with the southern states which need to be careful with severe thunderstorms and tornado watches from Thursday & Friday. It was only 2 weeks ago they had record freezes and Iguanas falling from the trees. lol

All told, the higher peaks of the Northern Sierra could tally up to 8 feet of snow through Friday, while Lake Tahoe and the San Gabriel Mountains could see up to 4 feet of snow.

As these storms track east, they will provide much-needed snow for the Rockies, where some snowpacks are at record lows.

It's winter, what do you expect 😬. You spent a past life up here in the northeast. Luckily most is east of us. Last frost usually June 1 for us. NYC can use it to cover all the garbage they haven't picked up in weeks 😆.

It hasn't been bad in the N'east since I left back in late 2015. All my friends and family said winters have been somewhat mild and very little snow until this year. Now MA has been hit pretty hard with snow and extreme cold this winter. My mom just got their gas bill for their condo which is only 1,250 sq ft and a newer HVAC and it was $445.00. They only keep the heat at 66 because it's very well insulated and they have newer windows too. It's all the delivery charges and fees the state keeps adding onto it. I'm so glad I'm out of there and don't know how people can afford anything up there making under $150k. Even then that's not really enough when you add in the high taxes and insurance there.

We are through a normal years worth of firewood so far this year with 2 more months to go. Yeah, here in Va., I have used much more firewood than anticipated this year. I am trying to use up a bunch of old wood from removing a bunch of trees on our property the last 2-3 years, because recent winters have been fairly mild, and the wood was starting to rot. Started think we may not even get through this season without sourcing more firewood. Luckily a local farm market had a close out on saw dust firewood logs last summer, and was able to stretch out our firewood supply.
