We finally adjusted our 2019 Ranger Project's PCM for its LT285/70R17 KO2s after a while of driving with "good enough" speedometer accuracy.

It's pretty simple, though it is more pricey than the ForScan route and doesn't come with any sort of performance tuning like an nGauge (and hopefully SCT gets it together with tire size changes), it's still a good and straightforward option for getting the speedo back on track.

Video's pretty dry, but here it is for those interested:

Would there be any issue with warranty coverage having used this tool to calibrate 265/70s?

Tough to say. All warranty decisions are up to individual dealerships, so you'd have to ask your service advisor.

That being said, 265/70R17s are an OEM tire size, so your dealership can adjust your truck via IDS if you're worried about your warranty.

The dealership tried yesterday and was unable to change it even with forscan so they said they would have to use the aftermarket module which they were going to charge 400 dollars for.

I mean, if they're telling you to use an aftermarket module, I have a hard time believing they'd refuse potential warranty repairs.

Just get it in writing.
