My truck came with Hankooks, but I nicked one wheeling and need to replace it. Was going to replace with my spare, UNTIL I found out it was a 17".

I bought a set of Wheels and tires, BUT the tires are Bridgestone Duelers. Should I put them on use one Hankook as spare on matching rim, or sell the set of 4 and buy another Hankook?

You should be fine in general. My truck came with 17 inch Bridgestone Duelers and the spare is a Hankook.

Yes it is preferred to match when you can but not a need right away.
