Help me understand what swapping these out does for the truck? Do you actually disconnect them at times?

Basically allows your front suspension to operate truly independent of each other whereas the sway bar normally links them together to provide some rigidity.
Off-road, disconnecting the sway bar let's your suspension flex a bit more without impacting the posture of the truck as much. On the road, the sway bar being connected reduces body roll when turning/steering at speed and therefore improves handling immensely. These disconnects allow off-roaders to quickly switch between either setup.
