Back in the day I was friends with a paramedic.
He liked to reminisce about the horror calls while drinking on a Friday night.
Told us about the farmer who's tractor left the roadway and hit a tree.
Said the Farmer looked like he was napping face first on the steering wheel with no other sign of anything wrong.
Unfortunately the suicide knob found the wrong place to reside.

Well dam that farmer should have known better than to bend over like that. A little liquor is all it takes then your bent over and waking up with a black eye sore ass. Swearing u will never go camping agin.
Don’t know what this has to do with the steering wheel but a life lesson none the less.

looking at eBay pricing for a wheel & a bag to go in it $$$$.
Might be cheaper to get a larger wheel made ?

I can't speak for the OP, but I have the same issue in nearly every vehicle I drive, the only exceptions are German cars (especially Porsches) and full size trucks with adjustable pedals. My Ranger is far from the worst I've driven, Toyotas and the Tacoma in particular are nearly undriveable for me, but I wish it had an extra inch or so of extension on the wheel.

The plan is to swap the wheel & bag all in as a unit

I gave up the AB, cruise control and volume buttons on my MINI wheel for a proper 3 spoke Sparco...
