I hear your pain! My 2011 Ranger had a CD and my wife's Saturn had a changer. Now the new Ranger and her Mazda don't. I bought a couple 128GB mini USB stick and went to work ripping all our CDs. (Not as Many as you but enough. Yeah it takes time but once it is done your good. I also go to thrift stores and music exchange stores and look for older music, I'm more into 70s and 80s rock. I pick up the CDs cheap rip them and take them back and exchange them for more, cheap way to build a collection. I also dusted off my old turntable and connected up to my desktop so I could rip some of my old LPs, Yes I still have some vinyl. I also have an 8-track deck if I run across some thing at a yard sale. Some old stuff you can't find on CDs. The track changes on an 8-track are kind of annoying if the tap wasn't layed out well.

I haven't really noticed the delay that much but I don't use the voice commands that much. I'm working on getting into the habit of it. Only issue is on some of the LPs i've ripped Gracenotes comes up with strange album covers and has changes artist on at least one.

You can get a lot of music on 128GB

If you really don't like the strange album covers, and have time on your hands... I use a program called Mp3tag to make changes to the tags on the mp3's. There's also a component that lets you embed the album cover artwork into the file. Heck, you can add any image as the album cover, which might be fun when others are in the truck with you.
