On the off chance that Ford does offer the 2.7l in the Ranger it'd likely either be a top trim level option, or a specialty line (raptor, sport, tremor, shelby, etc). Along with it, probably a $40K+ starting price. Being able to spec an XL, or XLT ranger with a 2.7l probably is not going to happen.
A colder tstat isn't going to increase the cooling capacity of your truck. Its not going to do anything to extend your engine life. You're far more likely to run into issues not getting up to proper operating temp than you are to see benefits opening the thermostat 20* lower.
This is why performance tunes call for higher octane. If your cylinder head temperatures are too high then your coolant temps are too high. The fan is going to be fully engaged and the thermostat is going to be wide open whether it opened at 170* or 190*. A colder t-stat isn't going to offer any...

Airing up bags to lift the rear would take tension off of the spring bars, negating some to all of the effect of the WDH. If you did use both you'd want to adjust the bags first, then adjust the WDH. You'd have to find the balance, as you don't want to take too much weight off the drive axles.
Ford doesn't require WDH at all on the ranger up to full tongue weight. There's a video of one of the engineers explicitly stating this.
