Canned potatoes? Why would you do that if they stay ripe for a year on a kitchen table?
Around here, they don’t last that long. Very hot and humid. They should be stored in a cool dark location… but no such thing in Southeast Alabama. I could dig a root cellar, but I’m not so sure even that would be cool here. ?‍♀

Spiral fries from fresh picked potatoes are the best. Like very sweet potato chips. The small ones make great salt potatoes. Spread them out in a dark cool area for a couple weeks to cure them. If you like canned potatoes go ahead and can them. Don't listen to the rest of us. Have you pressure canned before? Taters can become rubbery or musher so follow the instructions carefully.

Dig it deep enough and it will be fine. My Grandmothers place had one everything she put it it was fine. :). what part of Alabama? My mother was born in Huntsville and raised in Mobile. we got relatives all over the south

I never have pressure canned. I read the instructions & I’ve watched some videos. I’m not going to can but one batch…just to see.:oops::)

I never have pressure canned. I read the instructions & I’ve watched some videos. I’m not going to can but one batch…just to see.:oops::)
Guess potatoes are good to start with. My wife is afraid of our pressure canners and goes outside when I am pressure canning. The Ball Blue Book is a great guide for starting out. Don't believe everything you see in videos about canning. Always go by times and pressures from the USDA guides or the Blue Book. Have fun and let us know how they come out.

You see, I just don't trust Tracy... While I love potatos, she would probably be sending those awful bell peppers (and maybe eggplant) just to get rid of them. Of course, I don't blame her for wanting to get rid of them as they have no redeeming value.

Artichoke, broccoli, cucumbers, asparagus, or maybe celery? All of which deserve to be grown and eaten. But you just insist on those horrible bell peppers which are a total waste of gardening space.

You need to spike it with hot chili pepper. ???
Bell peppers, while having an awful taste also score zero on the Scoville scale. Good peppers such as Jalapenos score 2500 to 8000 on the scale and cayenne score 30000 to 50000. Poor bells, they have no value.
