I was given an iPhone 7 recently, a couple days ago I bought the Apple USB-A to lightning cable and CarPlay was working fine with just a data Sim in the phone in both my Ranger and my 2016 Focus RS (with updated USB hub). Only thing I wish I could do was initiate a call over Google Voice app with Siri by say "call [contact name] on Google Voice" Or access the Google voice dailer on the screen. My Pixel 6 Pro is preferred anyway though, and it was just a test.
