No two people are do the the exact same off-roading. I'm sure some have regretted a taller tire too.
I'd stick with stock size. If you go taller you lose suspension travel etc., plus everyone's version of 'off road' is different so It's a hard question to give an answer to.
Well, your service guy is right, they do look fine. My experience with the more aggressive AT tires, is that they're only good (in multiple ways) for the first half of their 'tread wear life'. Once that outer 50% is gone I've lost 80% of the functionality.

I've never once looked at a door sticker or a sidewall for recommended tire pressure on any car/truck I've ever owned. I've put 32lbs in them and watched them for irregular wear and/or rough ride and adjusted the pressure from there. Other than the odd occurrence they've stayed at 32.
I only go at it a couple times a year, other than the occasional stop at the local car wash.
Home detailing I use Turtle Wax products....wash and polish, and use other brand of ceramic spray, window cleaner and interior cleaner.
I'm no authority, but judging from your profile pic I'd say your tires have the most to do with your poor fuel economy. I noticed a difference going from OEM all seasons to OEM sized Duratracs, I can only imagine the beasts you've got.
Side body panels that are properly aligned to the one next to it....the back edge will be ever so slightly be 'sticking out' from the leading edge of the panel behind it.
If you stand at your tail light, look down the side of your vehicle at just the correct angle, you should see the back edge...

The only way to truly know the condition of your oil to get an analysis done of your old oil. They send back info on all the ingredients and how they've held up, or haven't held up.

Adjust the tire pressure. If you kept, for example, 35lbs when stock and have 35lbs now with the different leafs, shocks and tires, changing the tire pressure will make a big difference in ride.
