Well Aussie traditional anyway, having my son's almost father in law, over for dinner this afternoon. Our next door friends (well 70 meters away - we live on acreage) are also coming over for a few beers as well. I've decided that some traditional cooking is in order.

There is a stump I've been wanting to burn out down the back yard for some time, I'll set a fire around it and cook some ribs and lamb roast in a couple of my cast iron camp ovens once it dies down a bit and sets some coals. I'll pop a couple of chickens in the smoker as well. A pepper salt, and hot paprika rub, stuff them with chopped onion and lemon, 225F for 4 hours with maple chips should do them well.

There will be potatoes and onions in the camp ovens with the meat, as well as soy + worcestershire sauce for the lamb marinade, and smokey BBQ sauce + Coca cola for the ribs which will take about 2.5 / 3.0 hours, depending how often I turn them and how close to the hottest part of the fire, every fire is different, it always has to be adjusted on the fly. My wife and the lady next door will do salads.

There will be lots of cold beer and wine.

I'd say come on over, but, it's a bit far.... sorry:crying:

Our Backyard, The fire to be, prep of ribs, ( lamb in the other oven), cooking, chicken in smoker, finished chicken, sorry no pics of ribs out of the camp oven as it was getting dark and hungry guests devoured!

Yep it's all gone this morning, but will probably keep smouldering underground for a couple more days. It was a largish tree.

We don't talk about Rolf Harris anymore, fell from grace in a similar manner to a famous American comedian. Kangaroo steak is not half bad, I've had it before, I imagine dingo would be Ok if you like dog. Wallabies are too tough!
