I had a Mishimoto can and the hoses rotted away from gas fumes within a year. They did offer to replace them but it was such a PITA to access them i just returned it to stock. I would advise you look into something with fuel rated lines.

My first instinct is that this is not a good situation, primarily because you had to continue to add coolant. I would think the proper amount of coolant to add on a 2000 mile trip would be zero. But as @Figarou said it may just be condensation building up from not a lot of time at full operating...

Have you considered parking it, backed in of course, near the local baseball diamond or driving range? maybe you will get lucky and an errant slice could take care of everything....
