The console PRNDS light was eliminated mid-year 2020. Search this site and you'll find a build date after which it was eliminated. If you have a 2019 you should have it.
More than likely it wasn't the button presses, but rather you did a remote start with the FOB in your pocket. I've accidentally buttons on the FOB while climbing in/around the truck.

The UPR catch can is mounted pretty far forward and doesn’t get very warm, especially when driving. I suspect that adds to the condensation.

Where is the boost pressure tapped from? Looks like you never get vacuum while you were driving. I'd expect a vacuum on idle or deceleration from a gas turbo truck.

The skip-shifting (most noticeable 1-3) is quite normal. Mine does it also. If you engage tow/haul mode, you can see it quit most of the skip-shifting. Also under heavy acceleration, it will do 1-2-3 instead of 1-3.
