After you get the gears to display on the dash (hitting plus sign on shifter, as Tyler pointed out) you can also limit your top gear by hitting the minus sign. Just hit the plus sign to get back to all 10 gears.
This seems to be the setup I'm looking to run with a 2.5" leveling kit, but I can't find anything to confirm fitment. I'm thinking these 32.1" tall tires (only 10" wide) should work with minimal trimming and the crash bars in place but I want to be sure before I pull the trigger and order a set...

Update: mine seems to be sitting level.
I spend a decent amount of time off-road in my trucks and it usually involves some fairly difficult areas...mud/ruts, ditches or washouts, steep grades, loose rock, etc. My 2014 Tacoma off-road did very well and I'm confident the Ranger will do equally well once I get the suspension and tires...
I don't use my phone while driving, other than having it linked up to SYNC. Still easily within reach when I get in/out of the truck and not in the way of any controls, vents, etc while it is stored there.
Bought this for about $10 on Amazon and a .5m Apple cord fits perfectly. Used a similar mount in my last truck without any issues. Simple, cheap, and it works well.

Normally "Minor Trimming" pertains to some plastics on the fender liner and the plastic valance on the front bumper. You might have to trim more since you'd like to run...
