The bed can't be adjusted more than a few millimeters side to side. That's why they moved the cab instead. I checked the lot that day (pre-covid when dealers actually had inventory) and half of the Rangers had the same issue.

I had the same issue - dealer said they could only move the bed 1/4". The bed is pinned, so there isn't much they can do to adjust it. I couldn't tell any difference when I picked it up. I took it to a local body shop and they moved the cab. It looks much better now.
