Downshifting when coming to a stop has been driving me crazy, too. If I wanted to experience rough downshifts, I would have kept my WRX (at least then I was able to control it). I have also noticed lag/shudder when going uphill at lower speeds (~20 mph).

I paid $450 for premium. Call around (if you can). I think the original quotes were $399 (basic) and $499 (premium). But another installer not too far away quoted $350 and $450. The first (and closer) place price matched the lower quote.
Get the tow package if you can. The OEM setup looks slicker and I imagine it has a higher clearance than any aftermarket. It can be added later, but you'll probably have a difficult time finding the parts (mainly the hitch). It is a bit of a PITA to install, too (albeit not difficult).

Those bumper trim pieces on both sides of the receiver are included inside the box with the OEM tow hitch. They're listed as parts B and C in the trailer hitch installation instructions.
