Is there an "Instant MPG" setting...

I can't seem to find it.

My wife has one on her Escape and I use it to see the MPG I'm getting at a particular time to help me find sweet spots.

Yes there is - I found it by mistake when you select Fuel economy you can see it 4 different ways.

I use that all the time. I was hoping for a digital "number" read out like the Escape. It's easier to read.

I have a Lariat that doesn't have the option for a number read out but an XL does.

I did and the Lariat doesn't have an option for the numbers...only the slider bar.

Yes - the truck was sitting in my driveway, so it wasn't doing well on mileage at that moment.
