Tire sizing is pretty straightforward. For 265/65R17, 265 is the width in mm, 65 means the sidewall is 65% of the width, R stands for radial and 17 is the rim size.

Welcome, by the way! I’m about an hour north of London.

The "right" tire is very subjective. It will definitely depend on what you want to do with it, and what terrains you want to drive on.

You'll see a number like 112Q or similar, that's the speed rating, then you'll see a number like 400 which will be the tread wear rating. The higher the tread wear, the harder the rubber, and the harder the rubber, the less grip you will have on most surfaces.
Hard tires last longer.

Some brands are better than others (mildly subjective), some have Kevlar, some are 2 ply, some are 4 ply (so you don't poke holes in them as easily)

And that's all you need to know about tires.
