Kinda silly they would offer a 3.5” option and not advise that UCA are needed.

Interesting based off product description it said 2.0-3.0” lift.According to the instructions for the Pro Kit (which is poor and none specific to Ranger), they recommend using the lowest ring which would provide 3" lift or second ring providing 3.5" lift. The fourth and fifth if a no go with Eibach spring and would damage the suspension. I'm going with 3".

Not at this time...maybe in the future if I see a need.Are you using their block 1" lift for the rear?

Also, it seems like everyone is having issues with driveshafts popping out - any tips to prevent this?

Awesome. my kit will be here Wednesday and I went with the rear blocks. I was wondering about that 3.5" height I saw in the instructions they emailed me. I'll leave mine at 3" for now once I get them mounted and watch the UCA's for wear and may replace them if the need arises. $700 for a aftermarket set can wait.
I notice you kept your stock springs. Any reasons why? Also did you set the strut at the 3” or 2.25” mark. Trying to decide on mine. ThanksPoint of no return my friends...

Yes, sharp eyes I decided after deliberating for a bit that I didn't want to over extend the stock UCA's capacity and stay conservative. I mounted, according to instructions for using stock spring second ring from the top for 2.25" lift (I think it's more like 2.5" maybe more) in front and not need any additional blocks in the rear. I think I made the right choice as the stance is almost level but still has a slight rake and that will allow me to carry loads and/or tow without sagging the rear. Parked next to any stock Ranger however, the difference is striking. Even with this modest lift, I had to adjust my headlamps down considerably, several timesI notice you kept your stock springs.
