I’m looking to get a floor jack to keep in my tool box in the bed of the truck. Would a 2.5 Ton jack lift it enough so I could get a tire off if I get a flat?

For sure. I think the max weight per axle is about 3000 lb, and that's assuming you're carrying the max payload. Just need to make sure it it has enough travel to reach the lift points.

I have a 3 ton UniJack I carry in the back of my truck, most of the time. It is basically a jack stand combined with a bottle jack. Works well on both the truck and my RV. Fairly compact. $87 on Amazon.

I have to admit when I see the term floor jack, I think of the term floor jack I think of the Jacks you see NASCAR pit crews using. Not what I would want to carry in my bed all the time.

I bought one from the China Tool Store aka Harbor Freight. For as infrequently hopefully you'll use it, it will be fine. I do keep a piece of 2 x 8, in case on sandy soil and a piece of 4x4 so I don't have to jack as far.

I bought a 3-ton bottle jack from Home Depot. Came in a hard case and fits perfectly behind the rear seats. Also have a couple of square pads like you'd use for an RV leveling jack stored behind the seat as well.
Just in case.

I’ve got (2) 3 ton “floor” jacks in my garage as shop jacks but I agree with you. This is what I’d want in the bed of my truck. After watching the video I definitely think I’m going to pick one up. Thanks for the idea.

I have to agree with @Big Blue and @tgRanger. I’d much rather have to get that Unijack in and out of my truck than I would a 70 lb floor jack. It’s bloody heavy and will be at the bottom of the tool box, underneath EVERYTHING - a real PITA. But definitely buy the floor jack for your garage.

You can never have enough tools.

I have a 2.5 ton an 3 ton aluminum jack from Harbor Freight. They work fine but I only use them a handful of times a year. Aluminum reduces the weight enough to justify the additional cost. While fairly light they are large to carry all the time. My brother drives from Ky to Oh a lot an carries one for those trips but not in normal driving.
